Burritos - Washpool NP style





Bean burritos are a favourite staple of ours and we whip up a batch any time of the week when we feel like something filling and easy to cook.
Bean burritos also make the perfect camping food - torillas dont need refrigeration, beans and refried beans are easy to carry in cans and are easily cooked on an open fire, cheese and salads can be picked up in any little town or grocer.
Most importantly - burritos give you heaps of energy to burn for the following days hike!!



What you need:

1 ripe avocado
1 lemon
1/2 head of garlic, chopped
Olive oil
1 tin of refried beans (and 1 tin kidney beans if for more than 2 people)
1 tin of chopped tomatoes
1 medium onion, diced
1/2 capsicum, diced
2 tomatoes, sliced thinly
lettuce or salad mix
cheese
salt and pepper
a pack of tortillas


Scoop avocado out into a container for guacamole. Add about 3 cloves of chopped garlic, juice of 1/2 a lemon, salt and pepper to taste. Mash till smooth and set aside.

Saute onions and rest of chopped garlic with olive oil in saucepan till clear. Add tin tomatoes and capsicum. Stir well and let cook down till capsicum is getting soft. Add refried beans and mix very well till all combined. Salt and pepper to taste. Cook down until mixture is smooth and "bubbling".

Arrange guacamole and cheese on a tortilla, spoon on bean mix. Add tomato slices and salad. Roll up and enjoy!




Or enjoy straight off the fire from the saucepan!!


If you have left-overs in the morning, some scrambled egg goes surprisingly well with the bean mix wrapped up in any remaining tortillas :)
